Description

Buttered Corn Rice is a flavorful and easy-to-make side dish featuring tender long-grain rice cooked with sweet corn, sautéed onions, and garlic in a buttery, seasoned broth. This comforting recipe uses simple ingredients and the stovetop method to create a creamy, savory rice dish perfect for pairing with a variety of main courses.

Ingredients

Scale

Main Ingredients

  • 2 cups long-grain white rice
  • 4 cups chicken broth or water
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cups sweet corn kernels (fresh or frozen)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

Seasonings & Garnish

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  1. Rinse the rice: Rinse the rice thoroughly under cold water until the water runs clear to remove excess starch and prevent clumping.
  2. Sauté aromatics: Heat butter and olive oil together in a large skillet or saucepan over medium heat. Add the finely chopped onion and cook until soft and translucent, about 3 minutes.
  3. Add garlic and corn: Stir in minced garlic and corn kernels, cooking for an additional 2 minutes to develop flavor.
  4. Toast the rice: Add the rinsed rice to the pan and stir well, coating the grains evenly with the butter and oil mixture.
  5. Add liquid and season: Pour in the chicken broth or water, then season with salt, black pepper, and paprika. Stir gently to combine.
  6. Simmer rice: Bring the mixture to a boil, then reduce heat to low and cover tightly with a lid. Let it simmer gently for 18 to 20 minutes, or until the rice is tender and the liquid has been fully absorbed.
  7. Rest and fluff: Remove the pan from heat and let the rice rest, covered, for 5 minutes to finish steaming. Fluff the rice with a fork to separate the grains.
  8. Garnish and serve: Sprinkle chopped parsley over the top and serve warm as a delicious side dish.

Notes

  • You can substitute brown rice for white rice; just be sure to increase the cooking time to accommodate the longer cook time of brown rice.
  • Adding Parmesan cheese at the end enhances richness and adds a savory depth of flavor.
  • Frozen corn kernels are a convenient alternative when fresh corn is out of season and work equally well.
