Ingredients
Scale
Main Ingredients
- 2 cups long-grain white rice
- 4 cups chicken broth or water
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 2 cups sweet corn kernels (fresh or frozen)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
Seasonings & Garnish
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons chopped parsley (for garnish)
Instructions
- Rinse the rice: Rinse the rice thoroughly under cold water until the water runs clear to remove excess starch and prevent clumping.
- Sauté aromatics: Heat butter and olive oil together in a large skillet or saucepan over medium heat. Add the finely chopped onion and cook until soft and translucent, about 3 minutes.
- Add garlic and corn: Stir in minced garlic and corn kernels, cooking for an additional 2 minutes to develop flavor.
- Toast the rice: Add the rinsed rice to the pan and stir well, coating the grains evenly with the butter and oil mixture.
- Add liquid and season: Pour in the chicken broth or water, then season with salt, black pepper, and paprika. Stir gently to combine.
- Simmer rice: Bring the mixture to a boil, then reduce heat to low and cover tightly with a lid. Let it simmer gently for 18 to 20 minutes, or until the rice is tender and the liquid has been fully absorbed.
- Rest and fluff: Remove the pan from heat and let the rice rest, covered, for 5 minutes to finish steaming. Fluff the rice with a fork to separate the grains.
- Garnish and serve: Sprinkle chopped parsley over the top and serve warm as a delicious side dish.
Notes
- You can substitute brown rice for white rice; just be sure to increase the cooking time to accommodate the longer cook time of brown rice.
- Adding Parmesan cheese at the end enhances richness and adds a savory depth of flavor.
- Frozen corn kernels are a convenient alternative when fresh corn is out of season and work equally well.
