- 2 large chicken breasts

Pasta and Cheese
- 1 cup orzo pasta
- 1 (5.2 oz) package Boursin cheese (Garlic & Herb)
- 1/4 cup Parmesan cheese, grated
Liquids and Vegetables
- 1 tbsp olive oil
- 1 1/2 cups chicken broth
- 1 cup fresh spinach, chopped
Instructions
- Cook Orzo: Cook the orzo pasta according to package instructions until al dente. Once cooked, drain well and set aside.
- Cook Chicken: Heat olive oil in a skillet over medium heat. Season the chicken breasts on both sides with salt and pepper. Cook the chicken for 6-7 minutes per side, until golden brown and fully cooked through. Remove the chicken from the skillet and slice it into strips.
- Make Sauce: Using the same skillet, add the chicken broth and the Boursin cheese. Stir continuously until the cheese melts and the mixture becomes a smooth sauce.
- Combine Pasta and Spinach: Add the cooked orzo and chopped spinach to the sauce in the skillet. Stir and cook just until the spinach is wilted and everything is well combined.
- Serve: Plate the creamy orzo mixture and top with the sliced chicken breasts. Garnish with grated Parmesan cheese and serve warm.
