Description

This creamy and flavorful Boursin Orzo with Chicken recipe combines tender chicken breasts with tender orzo pasta, rich Boursin Garlic & Herb cheese, fresh spinach, and a sprinkle of Parmesan cheese for a comforting and quick weeknight meal ready in just 30 minutes.

Ingredients

Scale

Chicken and Seasoning

  • 2 large chicken breasts
  • Salt and pepper, to taste

Pasta and Cheese

  • 1 cup orzo pasta
  • 1 (5.2 oz) package Boursin cheese (Garlic & Herb)
  • 1/4 cup Parmesan cheese, grated

Liquids and Vegetables

  • 1 tbsp olive oil
  • 1 1/2 cups chicken broth
  • 1 cup fresh spinach, chopped

Instructions

  1. Cook Orzo: Cook the orzo pasta according to package instructions until al dente. Once cooked, drain well and set aside.
  2. Cook Chicken: Heat olive oil in a skillet over medium heat. Season the chicken breasts on both sides with salt and pepper. Cook the chicken for 6-7 minutes per side, until golden brown and fully cooked through. Remove the chicken from the skillet and slice it into strips.
  3. Make Sauce: Using the same skillet, add the chicken broth and the Boursin cheese. Stir continuously until the cheese melts and the mixture becomes a smooth sauce.
  4. Combine Pasta and Spinach: Add the cooked orzo and chopped spinach to the sauce in the skillet. Stir and cook just until the spinach is wilted and everything is well combined.
  5. Serve: Plate the creamy orzo mixture and top with the sliced chicken breasts. Garnish with grated Parmesan cheese and serve warm.

Notes

  • You can substitute chicken breasts with chicken thighs for juicier meat.
  • For a vegetarian version, omit the chicken and use vegetable broth.
  • If you prefer a lower-fat option, reduce the amount of cheese or use a lighter cheese alternative.
  • Adding a squeeze of lemon juice to the sauce can brighten the flavors.
  • Fresh herbs like parsley or basil can be added on top as a garnish.
