- 1 lb. cooked, seasoned shredded chicken
- 1 ½ cups freshly grated Colby-jack cheese
- 1 ½ cups freshly grated Pepper-Jack cheese
- Salsa, to serve
- Diced tomato, to serve
- Guacamole, to serve
- Sour cream, to serve
- Cilantro, for garnish
Tortillas & Oil
- 20 street taco corn tortillas
- Olive oil or olive oil cooking spray, for brushing
Instructions
- Preheat Oven: Heat oven to 425 degrees F. Line two large baking sheets with parchment paper.
- Prepare Tortillas: Place tortillas flat on the prepared baking sheets. Brush both sides of each tortilla lightly with olive oil or spray with olive oil cooking spray to ensure crispiness during baking.
- Add Filling: Spoon about two tablespoons of shredded chicken down the center of each tortilla. Top with two heaping tablespoons of a mixture of grated Colby-jack and Pepper-Jack cheeses.
- Melt Cheese: Bake tacos in the oven for 2 minutes or until the cheese just begins to melt.
- Form Tacos: Remove baking sheets from the oven. Carefully fold each tortilla in half, gently pressing the edges together to form taco shapes without breaking the tortillas.
- Crisp Tacos: Return the folded tacos to the oven and bake for an additional 12 to 14 minutes, or until the tortillas are crispy and golden on the outside.
- Serve: Remove from oven and serve immediately with desired toppings such as salsa, diced tomatoes, guacamole, sour cream, and fresh cilantro.
