- Prepare the apple filling: In a bowl, mix the diced Granny Smith apples with 1/4 cup sugar, ground cinnamon, and ground nutmeg. Stir well and let the mixture sit for a few minutes to allow the flavors to meld.
- Make the dough: In a large bowl, combine 2 cups of all-purpose flour, 1/4 cup sugar, and 1/2 teaspoon salt. Cut in the cold, cubed unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add 4 to 6 tablespoons of cold water, stirring until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
- Assemble the hand pies: On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Use a round cutter (about 4-5 inches in diameter) to cut out circles. Place a spoonful of the apple filling in the center of each dough circle. Brush the edges with a little water, then fold the dough over to create a half-moon shape. Seal and crimp the edges using a fork to prevent filling from leaking.
- Apply egg wash and bake: Place the assembled hand pies on a baking sheet lined with parchment paper. Brush the tops with the beaten egg wash for a golden finish.
