Ingredients
Scale
Potatoes
- 2 lbs russet potatoes, peeled and cut into thin matchsticks (shoestring style)
Seasoning & Oil
- 2 tbsp olive oil (or vegetable oil)
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp cayenne pepper (adjust for spice preference)
- 1/2 tsp chili powder
- 1 tsp salt
- 1/2 tsp black pepper
Optional Garnish
- 1 tbsp grated Parmesan cheese (for extra zest)
Instructions
- Preheat & Prep: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or a silicone baking mat to prevent sticking and help achieve crispy fries.
- Cut the Potatoes: Peel the russet potatoes and slice them into thin matchsticks about 1/8-inch thick. Use a mandoline or a sharp knife to ensure even thickness for uniform cooking.
- Rinse & Dry: Place the cut potatoes in a bowl of cold water and soak for 10 minutes. This step helps remove excess starch to prevent sogginess. Drain and thoroughly pat dry with a kitchen towel or paper towels.
- Season: Transfer the dried fries to a large bowl and toss them with olive oil, paprika, garlic powder, onion powder, cayenne pepper, chili powder, salt, and black pepper until they are evenly coated with the spices and oil.
- Bake: Spread the seasoned fries in a single layer on the prepared baking sheet, making sure not to overcrowd them to maintain crispiness. Bake for 20-25 minutes, flipping the fries halfway through the cooking time to ensure even browning and crispness.
- Optional Finish: Once baked, immediately sprinkle grated Parmesan cheese over the fries if desired to add an extra zesty flavor.
- Serve: Serve the hot, crispy shoestring fries with your favorite dipping sauces such as ketchup, ranch, or spicy mayo. Enjoy!
Notes
- Soaking the fries in cold water removes excess starch, resulting in crispier fries.
- Pat the potatoes very dry before seasoning to prevent sogginess and ensure even cooking.
- Adjust cayenne pepper quantity according to your preferred spice level.
- Use parchment paper or a silicone baking mat to help fries cook evenly and prevent sticking.
- Flipping the fries halfway through baking promotes even crisping on all sides.
- Parmesan cheese is optional but adds a delicious savory tang.
- For extra crispiness, you can bake the fries on a wire rack placed over the baking sheet.
