Description

This creamy and comforting White Chicken Chili is a flavorful twist on traditional chili, featuring tender shredded chicken, white beans, and a blend of aromatic spices. Perfect for a weeknight dinner, it’s easy to prepare on the stovetop and is rich with subtle heat and fresh lime and cilantro accents.

Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 can (4 ounces) diced green chiles
  • 2 cups cooked chicken breast, shredded
  • 4 cups low-sodium chicken broth
  • 1/2 cup sour cream
  • 1/2 cup half-and-half or heavy cream
  • Salt and black pepper to taste
  • 1 tablespoon lime juice
  • Chopped fresh cilantro for garnish

Instructions

  1. Sauté Onion and Spices: In a large pot, heat olive oil over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened. Stir in the minced garlic, ground cumin, dried oregano, chili powder, ground coriander, and cayenne pepper if using, cooking for an additional 30 seconds until fragrant.
  2. Add Beans, Chicken, and Broth: Mix in the drained white beans, diced green chiles, shredded cooked chicken, and low-sodium chicken broth. Bring the mixture to a boil.
  3. Simmer the Chili: Once boiling, reduce the heat to low and let it simmer gently for 20 to 25 minutes, allowing the flavors to meld together.
  4. Finish with Cream and Lime: Remove the pot from heat and stir in the sour cream, half-and-half or heavy cream, and lime juice. Adjust the chili’s salt and black pepper seasoning to your taste.
  5. Serve and Garnish: Ladle the chili into bowls and garnish with chopped fresh cilantro. Optionally, top with shredded cheese, avocado slices, or crispy tortilla strips for added texture and flavor.

Notes

  • For extra creaminess, blend 1 cup of the white beans with a little broth before adding to the chili.
  • Using rotisserie chicken can save prep time and adds flavor.
  • Adjust the cayenne pepper quantity based on your heat preference or omit for a milder version.
  • This chili is naturally gluten-free but always check labels if using pre-packaged ingredients.
