Ingredients
Scale
Cheese Mixture
- 8 ounces feta cheese, crumbled
- 4 ounces cream cheese, softened
- 1/4 cup olive oil (divided: 2 tablespoons for feta mixture, 2 tablespoons for tomatoes)
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Salt to taste
Tomatoes and Garnish
- 1 pint cherry tomatoes
- 1 tablespoon balsamic vinegar
- Fresh basil leaves for garnish
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the tomatoes.
- Prepare Whipped Feta: In a food processor, combine the crumbled feta cheese, softened cream cheese, 2 tablespoons of olive oil, garlic powder, and black pepper. Blend until the mixture is smooth and creamy. Taste and add salt if necessary.
- Set Aside Whipped Feta: Transfer the whipped feta to a serving bowl and set it aside while you prepare the tomatoes.
- Toss Tomatoes: On a baking sheet, toss the cherry tomatoes with the remaining 2 tablespoons of olive oil and balsamic vinegar. Spread them out evenly in a single layer to ensure even roasting.
- Roast Tomatoes: Place the baking sheet in the preheated oven and roast the tomatoes for 15-20 minutes, until they are blistered and slightly caramelized.
- Cool Tomatoes: Remove the baking sheet from the oven and allow the tomatoes to cool slightly to enhance their flavor.
- Assemble and Garnish: Spoon the blistered tomatoes over the whipped feta and garnish with fresh basil leaves for a fragrant finish.
- Serve: Serve immediately with pita chips, crusty bread, or fresh vegetables for dipping.
Notes
- You can adjust the amount of garlic powder and black pepper according to your taste preference.
- For a spicier kick, add a pinch of red pepper flakes to the tomatoes before roasting.
- This dish is best served fresh, but you can prepare the whipped feta in advance and roast the tomatoes just before serving.
- Substitute fresh thyme or oregano for basil to vary the flavor profile.
- For a dairy-free option, try a vegan feta substitute and omit the cream cheese.
