Description

A fresh and flavorful Tortellini Caprese Salad combining cheesy tortellini, juicy cherry tomatoes, mozzarella pearls, and fresh greens, all tossed in a zesty garlic balsamic dressing. Perfect as a light meal or side dish, this no-bake salad comes together quickly and can be chilled to enhance flavors.

Ingredients

Scale

Salad Ingredients

  • 20 oz cheese tortellini, uncooked
  • 10 oz cherry tomatoes, halved
  • 8 oz mozzarella pearls
  • 1 cup chopped spinach
  • ¼ cup fresh basil, chopped

Dressing Ingredients

  • ½ cup olive oil
  • 2 tablespoons balsamic vinegar
  • 3-4 garlic cloves, minced
  • ¾ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • Balsamic glaze, for drizzling (optional)

Instructions

  1. Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente, usually about 3-5 minutes. Drain the tortellini and rinse briefly with cool water to stop the cooking process and prevent sticking.
  2. Prepare the Salad: In a large mixing bowl, combine the cooked tortellini, halved cherry tomatoes, mozzarella pearls, chopped spinach, and chopped fresh basil. Gently toss to mix the ingredients evenly.
  3. Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, Italian seasoning, salt, and freshly ground black pepper until fully emulsified. Pour the dressing over the tortellini mixture and toss gently until everything is evenly coated.
  4. Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld. Before serving, toss the salad again to redistribute the dressing. Optionally, drizzle with balsamic glaze for an extra depth of flavor and a beautiful finish.

Notes

  • Ensure tortellini is cooked al dente to retain a pleasant chewy texture in the salad.
  • Rinsing tortellini with cool water stops cooking and prevents clumping.
  • Refrigerating the salad for 30 minutes or more enhances the flavor meld and texture.
  • Balsamic glaze adds a sweet tang and a decorative finish but is optional.
  • To make this gluten-free, substitute cheese tortellini with a gluten-free variety.
  • For a vegan option, use plant-based tortellini and mozzarella alternatives.
