Ingredients
Scale
Chicken and Vegetables
- 7 chicken breasts, trimmed and cut into 1-inch pieces
- 1 yellow pepper, cut into squares
- 1 red pepper, cut into squares
- 1 large red onion, peeled and cut into chunks
Seasonings and Sauce
- 1 tbsp salt
- 1 tbsp Mrs. Dash Seasoning
- 1 tbsp Grill Mates Smokehouse Maple Seasoning
- ½ tsp ground black pepper
- 1½ cups Sweet BBQ Sauce
- ½ cup BBQ Sauce (for brushing)
Instructions
- Prep the Ingredients: Trim excess fat from the chicken breasts and cut them into 1-inch pieces. Rinse the chicken pieces and drain well.
- Prepare Vegetables: Wash and cut yellow and red peppers into squares. Peel and chunk the large red onion. Combine all the vegetables with the chicken pieces in a large bowl.
- Season and Marinate: Mix salt, Mrs. Dash Seasoning, Grill Mates Smokehouse Maple Seasoning, and ground black pepper on a large plate. Sprinkle the seasoning mix evenly over the chicken and vegetables. Add 1½ cups of sweet BBQ sauce and toss everything together well. Cover the bowl and refrigerate for at least 6 hours to let the flavors meld.
- Skewer the Ingredients: Thread the marinated chicken pieces and vegetables onto metal or pre-soaked wooden skewers, alternating pieces for even cooking and presentation.
- Grill the Skewers: Preheat your grill to medium-high heat, then reduce the heat to low. Place the skewers on the grill and cook for 15 minutes.
- Flip and Continue Grilling: Turn the skewers over to cook the other side. Brush them generously with ½ cup BBQ sauce. Grill for another 15 minutes.
- Final Basting and Grill: Flip the skewers once more, brush the other side with BBQ sauce, and grill for an additional 10 to 15 minutes until the chicken is fully cooked, tender, and develops a slightly charred exterior.
- Serve: Remove the skewers from the grill and serve hot with your favorite side dishes, such as grilled vegetables, coleslaw, or cornbread.
Notes
- For best flavor, marinate the chicken and vegetables for at least 6 hours or overnight.
- Be sure to soak wooden skewers in water for 30 minutes before grilling to prevent them from burning.
- Adjust BBQ sauce quantity based on your preference for sauciness.
- Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C) for safe consumption.
- Vegetables like peppers and onions add a nice sweetness and crunch that complement the smoky BBQ flavor.
