Description

This comforting Taco Pasta recipe combines hearty ground beef, creamy mushroom soup, and flavorful taco seasonings tossed with spaghetti and topped with melted cheddar cheese for a quick and satisfying family-friendly meal.

Ingredients

Scale

Pasta

  • 6 ounces spaghetti (or other pasta)

Meat and Vegetables

  • 1 pound ground beef
  • ½ cup diced onion

Sauce

  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 (10 ounce) can diced tomatoes and green chilies (such as RO*TEL®)
  • â…” cup water
  • 1 ounce taco seasoning
  • 1 (8 ounce) package processed cheese (such as Velveeta®), cubed

Topping

  • 1 cup shredded sharp Cheddar cheese

Instructions

  1. Cook Pasta: Cook spaghetti according to package directions until al dente. This ensures the pasta maintains a pleasant texture when combined with the sauce later.
  2. Browns Beef and Sauté Onions: While the pasta is cooking, brown the ground beef and diced onions together in a skillet over medium heat until the beef is fully cooked and onions are soft.
  3. Make Sauce: Stir in condensed cream of mushroom soup, diced tomatoes with green chilies, water, and taco seasoning into the skillet with the beef and onions. Cook the mixture until all ingredients are well combined and heated through.
  4. Melt Processed Cheese: Add cubed processed cheese (such as Velveeta®) to the skillet and stir until completely melted and incorporated into the sauce, creating a rich, creamy texture.
  5. Combine Pasta and Sauce: Drain the cooked pasta and add it to the skillet with the sauce. Toss everything together to coat the pasta evenly with the cheesy taco sauce.
  6. Top and Melt Cheddar: Sprinkle shredded sharp Cheddar cheese over the pasta, cover the skillet, and let it stand off the heat until the cheddar cheese melts and becomes gooey, enhancing the dish’s texture and flavor.

Notes

  • You can substitute ground turkey or chicken for a leaner protein option.
  • Add extra diced green chilies or jalapeños for more heat.
  • Use your favorite pasta shape such as rotini or penne for variation.
  • Make it vegetarian by substituting ground beef for sautéed mushrooms and using a vegetarian taco seasoning.
  • Leftovers store well and reheat nicely in the microwave or on the stovetop.
