These Sweet Potato Pie Bars are a delicious twist on the classic Southern dessert, combining a rich, spiced sweet potato filling with a buttery, flaky crust. Perfect for holiday gatherings or anytime you crave a comforting, sweet treat in an easy-to-serve bar form.

For the crust:
- 1 ½ cups all-purpose flour
- ¼ cup granulated sugar
- ½ teaspoon salt
- ¾ cup unsalted butter, cold and cubed
- 2-3 tablespoons ice water
For the filling:
- 2 cups cooked and mashed sweet potatoes (about 2 medium sweet potatoes)
- 1 cup granulated sugar
- ½ cup brown sugar
- 3 large eggs
- ½ cup heavy cream
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon salt
Instructions
- Prepare the crust: Preheat your oven to 350°F (175°C). In a food processor, pulse the flour, sugar, and salt until combined. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs. Add 2 tablespoons of ice water and pulse again until the dough starts to come together. If needed, add the remaining tablespoon of ice water. Press the dough into the bottom of a greased 9×13-inch baking dish, making sure it’s evenly spread. Bake for 10-12 minutes, or until lightly golden. Remove from the oven and set aside.
- Prepare the filling: In a large mixing bowl, whisk together the mashed sweet potatoes, granulated sugar, brown sugar, eggs, heavy cream, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth and well combined.
- Assemble and bake: Pour the sweet potato mixture over the partially baked crust and spread evenly. Bake for 40-45 minutes, or until the filling is set and a toothpick inserted comes out clean.
- Cool and serve: Let the bars cool completely in the pan before slicing into squares. Serve with whipped cream or a sprinkle of cinnamon for an extra treat.
Notes
- Make sure the butter is very cold when making the crust for a flaky texture.
- You can roast or boil sweet potatoes ahead of time to save preparation time.
- For easier slicing, chill the bars in the refrigerator before cutting.
- These bars can be stored in an airtight container in the refrigerator for up to 4 days.
