Description

This Sticky Beef Noodles recipe combines tender slices of marinated beef stir-fried with fresh vegetables and chewy egg noodles, all coated in a savory, slightly sweet, and tangy sauce. Perfectly balanced with garlic, ginger, and a hint of sesame, this dish is a quick and satisfying weeknight dinner that delivers bold Asian flavors in just 30 minutes.

Ingredients

Scale

Beef Marinade

  • 1 lb beef sirloin or flank steak, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp vegetable oil

Sauce

  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, minced

Noodles and Vegetables

  • 8 oz egg noodles or rice noodles
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 2 green onions, chopped (for garnish)
  • 1 tbsp sesame seeds (for garnish)

Instructions

  1. Marinate the Beef: In a bowl, toss the thinly sliced beef with 2 tablespoons soy sauce, cornstarch, and 1 tablespoon vegetable oil. Make sure the beef is well coated and let it marinate for 15 to 30 minutes to tenderize and develop flavor.
  2. Prepare the Sauce: While the beef marinates, whisk together 3 tablespoons soy sauce, oyster sauce, hoisin sauce, sugar, rice vinegar, sesame oil, minced garlic, and minced ginger in a small bowl. Set aside for later use.
  3. Cook the Noodles: Cook the egg noodles or rice noodles according to the package instructions. Once cooked, drain them and toss with a little vegetable oil to prevent sticking. Set aside.
  4. Stir-Fry the Beef: Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for 2 to 3 minutes until browned but not fully cooked through. Remove the beef from the skillet and set aside.
  5. Stir-Fry the Vegetables: In the same skillet, add the sliced bell pepper and broccoli florets. Stir-fry for 3 to 4 minutes until the vegetables are tender-crisp, maintaining a bright color and a slight crunch.
  6. Combine Everything: Return the cooked beef to the skillet with the vegetables and pour in the prepared sauce. Stir-fry for an additional 2 minutes until the sauce thickens slightly and coats the beef and vegetables well.
  7. Add Noodles and Toss: Add the cooked noodles into the skillet and toss everything together until the noodles are fully coated with the sauce and heated through.
  8. Serve & Garnish: Serve the sticky beef noodles hot, garnished with chopped green onions and a sprinkling of sesame seeds for extra flavor and texture.

Notes

  • For a spicier version, add chili flakes or fresh sliced chili when stir-frying the vegetables.
  • Use flank steak or sirloin for best tenderness; avoid tougher cuts.
  • Feel free to substitute vegetables based on your preference, such as snap peas, carrots, or mushrooms.
  • If you can’t find oyster sauce, you can substitute with an equal amount of hoisin sauce or soy sauce, but the flavor will be less rich.
  • To make it gluten-free, use tamari or a gluten-free soy sauce and ensure the oyster sauce is gluten-free.
