Ingredients
Scale
Meat
- 1 lb ground beef
- 1 lb pork sausage
- ¾ cup chopped cooked bacon
Beans and Vegetables
- 2 (15-oz) cans chili beans, undrained
- 1 (15-oz) can black beans, drained and rinsed
- 3 (10-oz) cans Rotel diced tomatoes and green chiles
Liquids
- 1½ cups beef broth or beer
Spices
- 3 Tbsp dried minced onion flakes
- ¼ cup chili powder
- 2 tsp cumin
- ½ tsp garlic powder
- 1 tsp dried basil
- ¾ tsp cayenne pepper (or to taste)
Instructions
- Cook the Meat: In a large skillet, cook the ground beef and pork sausage over medium heat until they are no longer pink. Once cooked, drain off any excess fat to reduce greasiness in the chili.
- Combine Ingredients: Transfer the cooked meat into a slow cooker. Add the chopped cooked bacon, both cans of chili beans (undrained), the rinsed black beans, Rotel diced tomatoes with green chiles, beef broth or beer, and all the spices including dried minced onion flakes, chili powder, cumin, garlic powder, dried basil, and cayenne pepper.
- Slow Cook the Chili: Cover the slow cooker and cook the chili on the LOW setting for 5 to 6 hours. This slow cooking process allows the flavors to fully develop and results in a rich, spicy chili perfect for serving.
Notes
- For a milder chili, reduce or omit the cayenne pepper.
- You can substitute beef broth with beer for a deeper flavor profile.
- Serve with toppings like shredded cheese, sour cream, or chopped green onions for added texture and flavor.
- Leftovers can be refrigerated for up to 4 days or frozen for longer storage.
