Description

Delicious and vibrant Spicy Shrimp and Veggie Skewers featuring marinated shrimp, bell pepper, zucchini, red onion, and optional pineapple chunks. Perfectly grilled or oven-baked, these skewers are packed with bold flavors from a zesty lime and chili marinade, making for a quick and healthy meal that’s great for any occasion.

Ingredients

Scale

For the Skewers

  • 1 pound shrimp (deveined and peeled)
  • 1 bell pepper (any color), cut into chunks
  • 1 zucchini, cut into chunks
  • 1/2 red onion, cut into chunks
  • 1/2 cup pineapple chunks (optional)

For the Marinade

  • Juice of 1 lime
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil

Instructions

  1. Prepare the marinade: In a medium bowl, whisk together the lime juice, chili powder, cumin, garlic powder, and olive oil until well combined to create a flavorful marinade.
  2. Marinate the shrimp and veggies: Add the shrimp, bell pepper chunks, zucchini chunks, red onion chunks, and pineapple (if using) to the marinade. Toss everything to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to meld.
  3. Preheat grill or oven: If grilling, preheat your grill to medium-high heat. For baking, preheat your oven to 400°F (200°C).
  4. Assemble the skewers: Thread the shrimp and vegetables alternately onto skewers, creating a colorful and balanced combination of shrimp, bell pepper, zucchini, red onion, and pineapple.
  5. Cook the skewers: For grilling, place the skewers on the grill and cook for 5 to 7 minutes per side, turning once, until shrimp are fully cooked and veggies are tender. For baking, arrange the skewers on a baking sheet and bake in the preheated oven for 10 to 12 minutes until the shrimp turn pink and vegetables soften.
  6. Serve: Serve the skewers hot over a bed of rice, quinoa, or fresh greens for a wholesome and satisfying meal.

Notes

  • Soak wooden skewers in water for 30 minutes before assembling to prevent burning on the grill.
  • Adjust the chili powder amount according to your preferred spice level.
  • Pineapple is optional but adds a sweet contrast to the spicy marinade.
  • Ensure shrimp are deveined and peeled to maintain a clean texture and flavor.
  • These skewers can be cooked under the broiler for 8–10 minutes as an alternative to grilling or baking.
