- 2 cups makhana (fox nuts)
- 1 tablespoon ghee or olive oil
- ¼ teaspoon turmeric powder
- ¼ teaspoon red chili powder
- ¼ teaspoon black salt or regular salt
- ¼ teaspoon chaat masala (optional)
- Freshly ground black pepper to taste
Instructions
- Heat the fat: Heat ghee or olive oil in a non-stick pan over low to medium heat to prepare for roasting the makhana.
- Roast makhana: Add the makhana to the heated pan and roast for 8–10 minutes, stirring continuously until the nuts become crisp and lightly golden. Test doneness by crushing one between your fingers—it should be crunchy and not chewy.
- Add spices: Reduce the heat to low and sprinkle turmeric powder, red chili powder, black salt, and freshly ground black pepper over the roasted makhana. Mix well to evenly coat the nuts with the spices.
- Cook briefly: Continue cooking for another 1–2 minutes, stirring continuously to blend the flavors and ensure the spices adhere to the makhana.
- Cool and store: Remove the pan from heat and allow the roasted makhana to cool completely before storing in an airtight container.
- Serve: Just before serving, sprinkle chaat masala over the makhana if desired for extra tang and flavor.
