- 1½ lbs carrots, peeled and cut into large chunks

Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prepare for roasting the carrots.
- Boil Carrots: Bring a large pot of salted water to a boil, add the carrot chunks, and cook for 10–12 minutes until they are fork-tender but not falling apart. Then drain the carrots and let them cool slightly.
- Smash Carrots: Transfer the drained carrots onto the prepared baking sheet. Using the bottom of a glass or jar, gently press down on each piece to flatten them while keeping them intact.
- Prepare Seasoning: In a small bowl, whisk together olive oil, melted butter, garlic powder, smoked paprika, salt, and black pepper until well combined.
- Season Carrots: Drizzle the seasoned oil and butter mixture evenly over the smashed carrots to coat them thoroughly.
- Roast: Place the baking sheet in the preheated oven and roast for 20–25 minutes, until the edges of the carrots become crispy and golden brown.
- Garnish and Serve: Remove from oven and optionally sprinkle with fresh chopped parsley and grated Parmesan or crumbled feta before serving.
