Description

This Slow Cooker Jalapeño Popper Dip combines creamy cheeses, spicy jalapeños, and smoky bacon into a warm, flavorful appetizer perfect for parties and gatherings. Made effortlessly in a slow cooker, it’s a deliciously melty dip with a spicy kick and savory depth from the salsa verde and seasonings.

Ingredients

Scale

Vegetables and Herbs

  • 1 cup red bell peppers, diced
  • 5-6 jalapeños, seeds removed, diced
  • 2 tablespoons parsley, finely chopped
  • 1 cup frozen corn

Cheeses and Dairy

  • 2 cups cheddar cheese, shredded
  • 1 cup pepper jack cheese, shredded
  • 1 cup sour cream
  • 8 ounces cream cheese, softened

Meat

  • 6 slices bacon, precooked and crumbled

Other Ingredients and Seasonings

  • 1 ½ cups salsa verde
  • 1 teaspoon garlic powder
  • 1 teaspoon dill
  • ½ teaspoon cumin
  • ½ teaspoon red pepper flakes

Instructions

  1. Combine Ingredients: In a mixing bowl or directly in your slow cooker, combine the diced red bell peppers, diced jalapeños with seeds removed, finely chopped parsley, frozen corn, chopped bacon, salsa verde, garlic powder, dill, cumin, red pepper flakes, shredded cheddar cheese, shredded pepper jack cheese, sour cream, and softened cream cheese. Stir everything together until evenly mixed.
  2. Cook: Place the combined ingredients into a 3-quart slow cooker. Cover the slow cooker with its lid and cook on the low setting for 1 to 2 hours. During the cooking process, stir the dip every 30 minutes to help the cheeses melt evenly and to prevent burning on the sides.
  3. Serve: Once the dip is thoroughly melted, bubbly, and heated through, switch the slow cooker setting to ‘warm’ to keep the dip at an ideal serving temperature. Provide the dip with crackers, chips, or vegetable sticks for guests to enjoy.

Notes

  • Be sure to remove the seeds from the jalapeños to control the level of spiciness.
  • If you prefer a milder dip, reduce the number of jalapeños or omit the red pepper flakes.
  • You can precook the bacon in advance to save time and add a smoky crunch.
  • This dip pairs well with tortilla chips, sliced baguette, or fresh veggies.
  • Stirring the dip regularly during cooking helps prevent burning and ensures even melting.
