Description

This Slow Cooker Chicken Parmesan Soup is a comforting and hearty dish that combines tender shredded chicken, Italian seasonings, tomato-based broth, and campanelle pasta. Cooked low and slow for rich flavors, then finished with parmesan cheese and pasta for a satisfying, wholesome meal perfect for chilly days or family dinners.

Ingredients

Scale

Chicken and Seasonings

  • 2 to 3 boneless skinless chicken breasts
  • 1 Tbsp minced garlic
  • 1 Tbsp dried minced onion flakes
  • 1 Tbsp Italian seasoning

Tomato Base

  • 1 (6-oz) can tomato paste
  • 1 (8-oz) can tomato sauce
  • 1 (15-oz) can diced tomatoes
  • 2 (14.5-oz) cans chicken broth
  • 1 (24-oz) jar spaghetti sauce

Finishing Ingredients

  • ¼ cup grated parmesan cheese
  • 8 oz campanelle pasta (about 3 cups uncooked)

Instructions

  1. Combine Ingredients: Place the chicken breasts, minced garlic, dried onion flakes, Italian seasoning, tomato paste, tomato sauce, diced tomatoes, chicken broth, and spaghetti sauce into a 6-quart slow cooker. Stir the mixture well to combine all ingredients evenly.
  2. Cook Slowly: Cover the slow cooker and set it to cook on LOW for 6 to 8 hours, allowing the flavors to meld and the chicken to become tender.
  3. Shred Chicken: Once cooking is complete, carefully remove the chicken breasts from the slow cooker and shred them into bite-sized pieces using two forks.
  4. Add Pasta and Cheese: Return the shredded chicken to the slow cooker. Stir in the grated parmesan cheese and add the uncooked campanelle pasta.
  5. Finish Cooking: Set the slow cooker to HIGH and cook for an additional 15 to 20 minutes, or until the pasta is tender and cooked through. Stir occasionally to prevent sticking.

Notes

  • Use any similar shaped pasta if campanelle isn’t available, but adjust cooking time accordingly.
  • For a thicker soup, reduce the amount of chicken broth slightly.
  • If you prefer a spicier soup, add crushed red pepper flakes before cooking.
  • Leftovers reheat well and the flavors intensify after resting overnight.
  • Shredding the chicken before adding the pasta helps distribute protein evenly and enhances texture.
