Instructions

  1. Set up a double boiler: Bring a saucepan of water to a simmer and set a glass bowl over it, ensuring the bottom of the bowl does not touch the water. Add the semi-sweet chocolate chips and stir until melted and smooth. Then mix in the coconut oil until fully combined.
  2. Prepare the apples: Place the apples upright on a cutting board. Slice them into 1/2 to 3/4 inch thick slices. Use a paring knife to make a small slit at the bottom edge of each apple slice and insert a popsicle stick through the slit securely.
  3. Prepare the baking sheet: Line a large baking sheet with wax paper and lightly grease it with cooking spray to prevent sticking.
  4. Dip the apple slices: Dip each apple slice into the melted chocolate mixture, coating it fully. Place the coated slices on the prepared baking sheet. Refrigerate for 8 to 10 minutes, or until the chocolate is set.
