Instructions

  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the diced onion and cook for 3–4 minutes until softened. Stir in minced garlic and cook for another 30 seconds to release its aroma.
  2. Add Vegetables and Broth: Add the chopped broccoli florets and shredded carrot to the pot. Pour in the low-sodium broth. Bring the mixture to a boil, then reduce heat and let it simmer for 10–12 minutes until the vegetables become tender.
  3. Thicken Soup: In a small bowl, whisk the cornstarch into the skim milk until smooth. Pour this mixture into the simmering soup and continue to cook for another 5 minutes, stirring frequently to prevent lumps and help the soup thicken.
