Ingredients
Scale
Flatbread Base
- 1 batch pizza dough (homemade or store-bought, divided into 4 pieces)
Toppings
- 2 cups shredded rotisserie chicken
- ½ cup BBQ sauce (Sweet Baby Ray’s Sweet Vidalia Onion recommended)
- ½ cup goat cheese, crumbled
- 4 radishes, thinly sliced
- 1 cup baby arugula
- 1 tablespoon balsamic vinegar (optional)
Instructions
- Preheat Grill: Heat your grill to medium heat and set up for indirect grilling, ensuring one side is heated for cooking while the other stays cooler for indirect heat.
- Prepare Dough: Divide your pizza dough into 4 equal pieces. Press each piece into a flatbread shape, approximately 6-8 inches in diameter.
- Grill Flatbread Base: Place each flatbread dough piece over the direct heat side of the grill and cook until it is browned on one side, about 2-3 minutes.
- Flip and Add Toppings: Flip the flatbread over to the uncooked side. Quickly spread BBQ sauce evenly over the surface, then top with shredded rotisserie chicken, crumbled goat cheese, and thinly sliced radishes.
- Finish Cooking: Continue grilling the flatbread until the bottom side is browned and crispy, and the goat cheese begins to melt, about 3-4 minutes.
- Add Fresh Toppings: Remove the flatbread from the grill. Top with fresh baby arugula and, if desired, drizzle with balsamic vinegar for an extra touch of flavor.
- Serve: Slice and serve warm immediately, enjoying the combination of smoky, tangy BBQ chicken with fresh and creamy toppings.
Notes
- For a crispier flatbread, ensure your grill is preheated to medium-high and the dough is not too thick.
- You can substitute goat cheese with mozzarella or feta according to your preference.
- If you don’t have a grill, this flatbread can also be cooked on a stovetop grill pan or in a preheated oven on a pizza stone.
- Balsamic vinegar adds a nice acidity but can be omitted if you prefer.
- Use leftover rotisserie chicken or cook chicken breasts ahead of time and shred.
