Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 375°F (190°C) and grease a 24-cup mini muffin pan to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, Italian seasoning, garlic powder, salt, and black pepper until well combined.
  3. Combine Wet Ingredients: In a separate bowl, whisk the whole milk and egg until fully blended.
  4. Combine Wet and Dry Mixtures: Add the wet ingredients into the dry mixture and stir gently until just combined; avoid overmixing to keep the batter light.
  5. Fold in Add-ins: Carefully fold in shredded mozzarella, pepperoni, grated Parmesan, and the optional bell pepper and onion, ensuring even distribution throughout the batter.
  6. Rest the Batter: Allow the batter to rest for 5 minutes; this helps it thicken slightly for better texture.
