To Serve

  • 1 to 2 heads of butter lettuce
  • Shredded carrots (optional)


Instructions

  1. Cook the chicken: Heat olive oil in a large non-stick skillet over medium-high heat. Add the ground chicken and cook, breaking it apart with a spatula, until fully browned and cooked through. Drain any excess fat from the skillet.
  2. Add aromatics and sauce: Stir in the minced garlic, diced onion, hoisin sauce, soy sauce, rice wine vinegar, freshly grated ginger, and Sriracha. Cook and stir the mixture for about 1 to 2 minutes, until the onions become translucent and fragrant.
  3. Incorporate water chestnuts and green onions: Add the drained sliced water chestnuts and thinly sliced green onions to the skillet. Continue cooking and stirring for another 1 to 2 minutes until the vegetables are tender. Season with kosher salt and freshly ground black pepper to taste.
  4. Prepare the lettuce wraps: Separate the butter lettuce leaves and wash them thoroughly to remove any grit. Pat dry with a paper towel.
