Ingredients
Scale
Fruit Filling
- 4 cups fresh peaches, peeled, pitted, and sliced
- 2 cups fresh strawberries, hulled and halved
- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
Topping
- 1 cup old-fashioned rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small cubes
Instructions
- Preheat Oven and Prepare Fruit: Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the sliced peaches, halved strawberries, granulated sugar, cornstarch, lemon juice, cinnamon, and salt. Toss gently to coat the fruit evenly, ensuring the mixture is well combined.
- Transfer Fruit Mixture: Grease a 9×13-inch baking dish and transfer the coated fruit mixture into the dish, spreading it out evenly for uniform baking.
- Make Crisp Topping: In a separate bowl, mix together the rolled oats, all-purpose flour, brown sugar, cinnamon, and salt. Add the cold, cubed unsalted butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Top and Bake: Sprinkle the oat topping evenly over the fruit layer in the baking dish. Place the dish in the preheated oven and bake for 40 to 45 minutes, or until the topping is a golden brown and the fruit is bubbling around the edges.
- Cool and Serve: Remove the crisp from the oven and let it cool slightly before serving. Enjoy warm, optionally topped with vanilla ice cream or whipped cream for extra indulgence.
Notes
- For a nuttier flavor and added crunch, stir in 1/4 cup chopped pecans or almonds into the crisp topping before baking.
- If using frozen fruit instead of fresh, thaw it completely and drain any excess liquid to prevent a soggy crisp.
