Peach Sorbet Ingredients
- 4 cups ripe peaches (peeled, pitted, and sliced – about 5–6 medium peaches)
- 1/2 cup granulated sugar
- 2 tablespoons lemon juice (freshly squeezed)
- 1/4 cup water
- Pinch of salt
Instructions
- Cook Peaches: In a saucepan over medium heat, combine the sliced peaches, sugar, water, and a pinch of salt. Cook for about 5–7 minutes, stirring occasionally, until the peaches are soft and the sugar is completely dissolved. Then remove the saucepan from the heat and allow the mixture to cool slightly.
- Blend the Mixture: Transfer the warm peach mixture to a blender or food processor. Add the freshly squeezed lemon juice. Blend until the mixture is completely smooth and uniform in texture.
- Strain for Smoothness: For a smoother sorbet texture, pour the blended peach mixture through a fine mesh strainer into a bowl, removing any fibrous bits or pulp.
- Chill the Mixture: Cover the bowl and refrigerate the peach puree for at least 2 hours or until it’s very cold. This chilling step ensures the sorbet churns properly.
- Churn the Sorbet: Once chilled, pour the peach mixture into your ice cream maker. Churn according to the manufacturer’s instructions, typically for 20–25 minutes, until the sorbet is thick and smooth in consistency.
- Freeze to Firm Up: Transfer the churned sorbet into an airtight container. Freeze for at least 2 hours to allow the sorbet to firm up before serving.
Notes
- If you don’t have an ice cream maker, pour the chilled sorbet mixture into a shallow pan and place it in the freezer. Stir vigorously every 30 minutes for about 3 hours to break up ice crystals and create a smooth texture.
