Scale
Main Ingredients
- 150 g Toasted Black Sesame Seeds (or black sesame paste)
- 1 to 1.5 cups Water (Adjust for thickness)
- 1 tablespoon Rock Sugar (or substitute with other sugars)
- 0.5 tablespoon Glutinous Rice Flour
- 1 tablespoon Sesame Oil (or neutral vegetable oil)
Garnishes
- Toasted White Sesame Seeds
- Coconut Milk (for creaminess)
Instructions
- Toast the Sesame Seeds: Over low heat, toast the black sesame seeds for 7-12 minutes until they become fragrant and golden, stirring occasionally to prevent burning.
- Blend into Paste: Place the toasted black sesame seeds into a grinder or blender with a small amount of water, and blend until you achieve a smooth and thick paste.
- Prepare the Base: In a pot, combine the black sesame paste with glutinous rice flour that has been dissolved in some water, then add more water to adjust the consistency to your preference.
- Simmer the Soup: Heat the pot over medium heat, stirring continuously to prevent lumps and sticking. Let the mixture simmer gently for about 10 minutes until it thickens evenly.
- Sweeten and Adjust Thickness: Gradually add the remaining glutinous rice flour and rock sugar to the pot, stirring well. Taste and adjust the sweetness or thickness as needed by adding more water or sugar.
- Finish and Serve: Optionally stir in the sesame oil to enhance the nuttiness. Ladle the black sesame soup into bowls, garnish with toasted white sesame seeds, and drizzle with coconut milk to add creaminess before serving.
Notes
- Use rock sugar for authentic flavor, but other sugars like brown sugar or white sugar can be substituted.
- Adjust water quantity to get your preferred soup thickness, thinner for sipping, thicker for a pudding-like texture.
- Toast sesame seeds carefully to avoid burning, which can impart bitterness.
- For a quicker option, premade black sesame paste can be used.
- The dessert can be enjoyed warm or chilled depending on preference.
