Description

Mushroom Chicken Bites is a quick and flavorful skillet dish featuring tender boneless chicken thighs seared to perfection and combined with sautéed brown mushrooms, shallots, bell pepper, and garlic. This savory recipe is seasoned with Italian herbs and paprika, making it a perfect weeknight meal that is both comforting and delicious.

Ingredients

Scale

Chicken

  • 2 tablespoons oil, divided
  • 1 lb boneless chicken thighs, cut into 1-inch (2cm) pieces
  • ½ teaspoon salt, to taste
  • ¼ teaspoon cracked pepper
  • 2 teaspoons Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika

Mushrooms and Vegetables

  • 8 ounces sliced brown mushrooms
  • 3 tablespoons butter
  • 1 tablespoon brown shallot, chopped
  • 1 tablespoon green bell pepper, seeded and chopped
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the Chicken: Heat 1 tablespoon of oil in a skillet over medium-high heat until hot. Add the chicken pieces and season evenly with salt, cracked pepper, Italian seasoning, garlic powder, onion powder, and paprika. Stir well to coat the chicken with the spices. Sear the chicken until browned on all sides and cooked through, which typically takes 5 to 6 minutes. Once cooked, transfer the chicken to a plate and cover to keep warm.
  2. Cook the Mushrooms and Vegetables: In the same skillet, add the sliced brown mushrooms and cook for about 3 to 4 minutes, stirring occasionally, until they soften and start to brown. Add the remaining tablespoon of butter and let it melt. Then add the chopped brown shallots and diced green bell pepper to the pan. Sauté these vegetables until they become soft and fragrant, around 3 minutes. Add the minced garlic and cook for another 30 seconds, making sure not to burn it, just enough to release its aroma.
  3. Combine and Serve: Return the cooked chicken to the skillet and mix everything together thoroughly so the chicken and vegetables are coated in the flavorful pan juices. Continue cooking for an additional 1 to 2 minutes to heat everything through and allow the flavors to meld. Taste and adjust seasoning with extra salt and pepper if needed. Sprinkle freshly chopped parsley over the dish. Serve warm and enjoy your quick and delicious Mushroom Chicken Bites!

Notes

  • You can substitute boneless chicken thighs with chicken breasts, but thighs provide more flavor and tenderness.
  • For a spicier kick, add a pinch of red chili flakes along with the other seasonings.
  • This dish pairs well with steamed rice, mashed potatoes, or a crisp green salad.
  • If you prefer, use olive oil instead of vegetable oil for added flavor.
  • To make it dairy-free, substitute butter with a plant-based alternative or extra oil.
