Meatball Mixture
- 1 1/2 cups cooked lentils, well drained
- 1 cup breadcrumbs

- 1 teaspoon dried oregano

- Preheat and prepare pan. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
- Mix meatball ingredients. In a large bowl, mash the cooked lentils slightly with a fork, leaving some texture. Add the breadcrumbs, Parmesan cheese, eggs, garlic, onion, parsley, oregano, salt, and black pepper. Mix thoroughly until the ingredients are fully combined and the mixture holds together well.
- Form meatballs with mozzarella center. Take about 1 tablespoon of the mixture and flatten it slightly in your hand. Place a small cube of mozzarella cheese in the center, then wrap the lentil mixture completely around the cheese and roll into a ball, ensuring the mozzarella is fully sealed inside to prevent leaking. Repeat for the remaining mixture.
- Arrange on baking sheet. Place the formed meatball bites onto the prepared baking sheet evenly spaced. Lightly brush or spray the tops of the meatballs with olive oil to help achieve a golden crust during baking.
- Bake until golden and firm. Bake the meatball bites in the preheated oven for 18 to 22 minutes, or until they are golden brown and firm to the touch. For extra crispiness, you may broil them for the last 2 minutes of baking, watching carefully to prevent burning.
- Cool and serve. Allow the meatball bites to cool slightly on the baking sheet so the cheese inside can set a little before serving. Serve warm, optionally with marinara sauce for dipping.
