Description

These Mini Chicken Fajita Wonton Cups are a flavorful and crispy appetizer perfect for parties or family dinners. Made with seasoned chicken, sautéed onions and bell peppers, all nestled inside crispy baked wonton wrappers and topped with melted cheese, sour cream, fresh cilantro, and a hint of jalapeño heat, these bite-sized treats are both delicious and easy to make.

Ingredients

Scale

Wonton Cups

  • 1 package (12 ounces) wonton wrappers

Chicken Filling

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 1 bell pepper (red or green), thinly sliced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Toppings

  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream or Greek yogurt (for topping)
  • Fresh cilantro, chopped (for garnish)
  • Slices of jalapeño (optional, for extra heat)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to prepare for baking the wonton cups.
  2. Prepare and bake wonton wrappers: Lightly grease a mini muffin tin. Press each wonton wrapper into the cups, shaping them to fit properly. You can use a small cup to help mold them if needed. Bake the wontons for about 8-10 minutes until they are golden and crispy. Remove from the oven and set aside.
  3. Cook the chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with chili powder, cumin, paprika, garlic powder, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink in the center.
  4. Sauté the vegetables: Add the sliced onion and bell pepper to the skillet with the cooked chicken. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.
  5. Assemble the wonton cups: Once the wonton cups have cooled slightly, fill each cup evenly with the chicken and vegetable mixture. Top each filled cup with a generous sprinkle of shredded cheese.
  6. Melt the cheese: Return the filled wonton cups to the oven and bake for another 5-7 minutes or until the cheese is melted and bubbly.
  7. Garnish and serve: Remove the wonton cups from the oven and let them cool for a minute. Top each cup with a dollop of sour cream or Greek yogurt, fresh chopped cilantro, and slices of jalapeño if desired. Serve warm for the best flavor.

Notes

  • You can substitute chicken breasts with chicken thighs for juicier filling.
  • Feel free to use different types of cheese like Monterey Jack or pepper jack for extra flavor.
  • For a vegetarian version, substitute chicken with seasoned sautéed mushrooms or beans.
  • Wonton cups can be prepared ahead and filled just before serving.
  • Adjust the spices and jalapeño slices according to your preferred heat level.
