Chicken and Stuffing

  • 4 boneless, skinless chicken breasts
  • 1 small apple (such as Granny Smith), thinly sliced
  • 4 oz brie cheese, sliced

Glaze and Seasoning

  • 2 tablespoons Dijon mustard
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Toothpicks or kitchen twine for securing


Instructions

  1. Preheat and Prepare Chicken: Preheat your oven to 375°F (190°C). Carefully cut a pocket into the side of each chicken breast without slicing all the way through to create space for the stuffing.
  2. Season Chicken: Season the chicken breasts inside and out with salt, pepper, and garlic powder to enhance flavor.
  3. Stuff Chicken: Fill each chicken pocket with several slices of apple and brie cheese. Secure the opening with toothpicks or kitchen twine to keep the filling inside while cooking.
  4. Make Glaze: In a small bowl, whisk together Dijon mustard, maple syrup, and olive oil until smooth and well combined.
  5. Apply Glaze and Bake: Place the stuffed chicken breasts in a greased baking dish. Brush them generously with the maple mustard glaze. Bake uncovered in the preheated oven for 25–30 minutes, or until the internal temperature reaches 165°F (74°C). Halfway through cooking, baste the chicken with more glaze to deepen the flavor.
  6. Rest and Serve: Remove the chicken from the oven and let it rest for 5 minutes to allow juices to redistribute before serving.
