Scale
Chicken and Potatoes
- 4 cups cooked and diced chicken breast
- 4 cups peeled and diced potatoes
Dressing and Flavorings
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Cheese and Toppings
- 1 1/2 cups shredded cheddar cheese (divided)
- 1/2 cup shredded mozzarella cheese (for topping)
- 1/2 cup cooked and crumbled bacon
- 1/2 cup chopped green onions
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the casserole.
- Mix Ingredients: In a large bowl, combine the cooked, diced chicken breast and peeled, diced potatoes. Add sour cream, mayonnaise, 1 cup of shredded cheddar cheese, crumbled bacon, chopped green onions, garlic powder, onion powder, salt, and black pepper. Stir thoroughly until all ingredients are evenly coated and well mixed.
- Prepare Baking Dish: Grease a 9×13-inch baking dish lightly to prevent sticking. Transfer the mixture into the dish and spread it out evenly for uniform cooking.
- Add Cheese Topping: Sprinkle the remaining 1/2 cup of shredded cheddar cheese along with the 1/2 cup shredded mozzarella cheese evenly over the top of the mixture to create a cheesy crust.
- Bake: Place the casserole in the preheated oven and bake uncovered for 25 to 30 minutes until the casserole is hot throughout and the cheese on top is melted and bubbly.
- Rest and Serve: Remove the casserole from the oven and let it cool for 5 minutes before serving. This resting period helps the casserole set for easier serving.
Notes
- For a crispier cheese topping, broil the casserole for 2-3 minutes after baking until golden and bubbly.
- Substitute Greek yogurt for sour cream to reduce fat content without sacrificing creaminess.
- Add steamed broccoli or other vegetables to the mixture for an added nutritional boost and extra texture.
