Description

This Loaded Baked Potato Chicken Casserole combines tender chicken, creamy potatoes, and a blend of cheeses for a hearty, comforting main dish. Featuring flavors inspired by classic loaded baked potatoes, this casserole is perfect for an easy family dinner with a delicious, cheesy topping.

Ingredients

Scale

Chicken and Potatoes

  • 4 cups cooked and diced chicken breast
  • 4 cups peeled and diced potatoes

Dressing and Flavorings

  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cheese and Toppings

  • 1 1/2 cups shredded cheddar cheese (divided)
  • 1/2 cup shredded mozzarella cheese (for topping)
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup chopped green onions

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the casserole.
  2. Mix Ingredients: In a large bowl, combine the cooked, diced chicken breast and peeled, diced potatoes. Add sour cream, mayonnaise, 1 cup of shredded cheddar cheese, crumbled bacon, chopped green onions, garlic powder, onion powder, salt, and black pepper. Stir thoroughly until all ingredients are evenly coated and well mixed.
  3. Prepare Baking Dish: Grease a 9×13-inch baking dish lightly to prevent sticking. Transfer the mixture into the dish and spread it out evenly for uniform cooking.
  4. Add Cheese Topping: Sprinkle the remaining 1/2 cup of shredded cheddar cheese along with the 1/2 cup shredded mozzarella cheese evenly over the top of the mixture to create a cheesy crust.
  5. Bake: Place the casserole in the preheated oven and bake uncovered for 25 to 30 minutes until the casserole is hot throughout and the cheese on top is melted and bubbly.
  6. Rest and Serve: Remove the casserole from the oven and let it cool for 5 minutes before serving. This resting period helps the casserole set for easier serving.

Notes

  • For a crispier cheese topping, broil the casserole for 2-3 minutes after baking until golden and bubbly.
  • Substitute Greek yogurt for sour cream to reduce fat content without sacrificing creaminess.
  • Add steamed broccoli or other vegetables to the mixture for an added nutritional boost and extra texture.
