Description

This Lemon Herb Grilled Chicken recipe features juicy boneless chicken breasts marinated in a zesty blend of fresh lemon juice, garlic, rosemary, and thyme, then grilled to perfection. It’s a simple, flavorful dish perfect for a healthy weeknight dinner or weekend barbecue.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts

Marinade

  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Zest of 1 lemon

Instructions

  1. Prepare the Marinade: In a small bowl, whisk together olive oil, lemon juice, minced garlic, rosemary, thyme, salt, pepper, and lemon zest until thoroughly combined and aromatic.
  2. Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2 to 4 hours for maximum flavor infusion.
  3. Preheat the Grill: Heat your grill to medium-high heat, ensuring it’s sufficiently hot before placing the chicken on the grates.
  4. Grill the Chicken: Remove the chicken breasts from the marinade and discard the leftover marinade. Place the chicken on the preheated grill and cook for 6 to 7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken develops a nice charred exterior.
  5. Rest and Serve: Transfer the grilled chicken to a plate and let it rest for a few minutes to allow the juices to redistribute, ensuring moist and tender chicken before serving.

Notes

  • For best results, marinate the chicken for at least 2 hours to allow the flavors to fully develop.
  • If you don’t have fresh herbs, dried rosemary and thyme can be used but reduce the quantity to 1 teaspoon each.
  • Ensure the grill is properly preheated to avoid sticking and to achieve the characteristic grill marks.
  • Use a meat thermometer to check for doneness to prevent undercooking or overcooking the chicken.
  • Leftover grilled chicken can be refrigerated for up to 3 days and is great for salads or sandwiches.
