Ingredients
Scale
Noodles
- 8 oz lo mein or soba noodles (or spaghetti as a substitute)
Vegetables & Aromatics
- 3 cloves garlic, minced
- 1 small onion, sliced
- 1 medium carrot, julienned or sliced thinly
- ½ cup sliced mushrooms (optional)
- 2-3 green onions, sliced (for garnish)
Sauces & Oils
- 2 tbsp sesame oil (or vegetable oil)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
Finishing Touches
- 1 tbsp butter
- 1 tbsp lemon juice (optional)
- 1 tsp sesame seeds (for garnish)
Instructions
- Cook the noodles: Cook the lo mein or soba noodles according to the package instructions until al dente. Drain them and set aside, reserving about ½ cup of the cooking water to loosen the noodles later if needed.
- Prepare the stir-fry: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the minced garlic and sliced onion, sautéing for 1-2 minutes until fragrant and the onion starts to soften.
- Add the vegetables: Add the julienned carrots and sliced mushrooms (if using) to the pan. Stir-fry for 3-4 minutes, cooking until the vegetables are tender but still crisp to retain their texture.
- Add the noodles and sauces: Add the cooked noodles to the skillet along with the soy sauce and optional oyster sauce. Stir everything together thoroughly to combine. Gradually add some of the reserved cooking water a little at a time if the noodles seem dry or need loosening.
- Finish the dish: Stir in the butter to melt evenly throughout the noodles, adding a rich and glossy finish. If desired, squeeze in some lemon juice to brighten the flavor profile.
- Garnish and serve: Transfer the hibachi noodles to a serving dish and garnish with sesame seeds and sliced green onions. Serve hot and enjoy your flavorful hibachi-style stir-fried noodles!
Notes
- If you don’t have lo mein or soba noodles, spaghetti is a suitable substitute.
- The oyster sauce is optional but adds depth and richness to the flavor.
- Adjust the soy sauce amount to taste, especially if using low-sodium soy sauce.
- Adding lemon juice at the end provides a fresh brightness that balances the richness of the butter.
- Use a wok or large skillet for even heat distribution while stir-frying.
- For a vegetarian version, omit oyster sauce or substitute with vegetarian stir-fry sauce.
