Instructions

  1. Cook the noodles: Cook the lo mein or soba noodles according to the package instructions until al dente. Drain them and set aside, reserving about ½ cup of the cooking water to loosen the noodles later if needed.
  2. Prepare the stir-fry: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the minced garlic and sliced onion, sautéing for 1-2 minutes until fragrant and the onion starts to soften.
  3. Add the vegetables: Add the julienned carrots and sliced mushrooms (if using) to the pan. Stir-fry for 3-4 minutes, cooking until the vegetables are tender but still crisp to retain their texture.
  4. Add the noodles and sauces: Add the cooked noodles to the skillet along with the soy sauce and optional oyster sauce. Stir everything together thoroughly to combine. Gradually add some of the reserved cooking water a little at a time if the noodles seem dry or need loosening.
  5. Finish the dish: Stir in the butter to melt evenly throughout the noodles, adding a rich and glossy finish. If desired, squeeze in some lemon juice to brighten the flavor profile.
