Description

This Herb-Crusted Tilapia with Roasted Vegetables recipe offers a delicious, healthy, and easy-to-make dinner. Lightly breaded tilapia fillets are baked to perfection alongside a colorful medley of caramelized roasted vegetables, making it a balanced and flavorful sheet pan meal perfect for weeknight dinners.

Ingredients

Scale

Tilapia and Coating

  • 4 tilapia fillets (about 5–6 ounces each)
  • 2 tablespoons olive oil (divided)
  • 1/2 cup breadcrumbs (plain or whole wheat)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Vegetables

  • 2 cups broccoli florets
  • 1 red bell pepper (sliced)
  • 1 yellow squash (sliced)
  • 1 zucchini (sliced)
  • 1 small red onion (cut into wedges)

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup and to prevent sticking.
  2. Make the Herb Breadcrumb Mixture: In a small bowl, combine the breadcrumbs, grated Parmesan cheese, dried basil, dried parsley, garlic powder, onion powder, salt, and black pepper. Mix well to create a flavorful coating.
  3. Prepare Tilapia Fillets: Pat the tilapia fillets dry with paper towels to ensure the coating sticks well. Lightly brush each fillet with some of the olive oil on top.
  4. Coat the Fish: Press the breadcrumb mixture onto the top surface of each tilapia fillet evenly, creating a herb-crusted topping.
  5. Arrange on Baking Sheet: Place the coated fillets on one side of the prepared baking sheet, leaving space for the vegetables.
  6. Prepare the Vegetables: In a large bowl, toss the broccoli florets, sliced red bell pepper, yellow squash, zucchini, and red onion wedges with the remaining olive oil, salt, and pepper to coat evenly.
  7. Add Vegetables to Baking Sheet: Spread the tossed vegetables in a single layer on the other side of the baking sheet, ensuring they have enough space to roast properly.
  8. Bake: Place the baking sheet in the oven and bake for 18 to 20 minutes, or until the tilapia flakes easily with a fork and the vegetables are tender and slightly caramelized.
  9. Serve: Remove from oven and serve immediately. Optional: add a squeeze of fresh lemon juice over the fish to brighten the flavors.

Notes

  • You can substitute tilapia with cod or haddock if preferred.
  • For extra crispy fish crust, broil the tilapia for the last 2 minutes of cooking.
  • Add a squeeze of fresh lemon juice before serving for added brightness and flavor.
