Description

This Hairy Bikers Sausage Casserole is a hearty and comforting British main course featuring succulent pork sausages simmered with vibrant vegetables and aromatic herbs in a rich tomato base. Perfect for a cozy family dinner, it combines traditional flavors and simple ingredients to create a satisfying and flavorful dish.

Ingredients

Scale

Meat

  • 8 pork sausages

Vegetables

  • 2 onions, sliced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped

Liquids and Sauces

  • 400g chopped tomatoes
  • 2 tablespoons tomato puree
  • 150ml beef stock
  • 2 tablespoons vegetable oil

Herbs and Spices

  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste

Garnish

  • Fresh parsley, chopped

Instructions

  1. Brown the sausages: Heat the vegetable oil in a large casserole or deep pan over medium heat. Add the sausages and brown them on all sides, then remove and set aside to retain their juices and develop a rich flavor.
  2. Sauté the aromatics: In the same pan, add the sliced onions and minced garlic, cooking until softened and fragrant, which forms the flavor base for the casserole.
  3. Add vegetables: Stir in the chopped carrots, red and yellow bell peppers. Cook for a few minutes until they start to soften but still hold their shape.
  4. Combine tomato and spices: Add the chopped tomatoes, tomato puree, smoked paprika, dried thyme, dried rosemary, and bay leaves to the pan. Pour in the beef stock and season with salt and black pepper to enhance the flavors.
  5. Simmer the casserole: Return the browned sausages to the pan. Bring the mixture gently to a simmer, then cover with a lid. Cook gently for 30-40 minutes, allowing the sausages to cook through and the vegetables to become tender while the flavors meld.
  6. Finish and serve: Remove the bay leaves from the casserole. Garnish with freshly chopped parsley before serving to add a fresh, vibrant touch.

Notes

  • Add a splash of red wine to the sauce for extra depth of flavor.
  • Serve with creamy mashed potatoes, crusty bread, or fluffy rice for a complete meal.
  • For a quicker meal, use pre-cooked sausages and reduce cooking time accordingly.
