Description

These Greek Yogurt Brownies offer a healthier twist on classic fudgy brownies by incorporating protein-rich Greek yogurt. The result is a moist, rich, and delicious chocolate treat that’s perfect for dessert or a snack. With simple ingredients and easy steps, these brownies are ideal for anyone looking to enjoy a guilt-reduced indulgence.

Ingredients

Scale

Wet Ingredients

  • 1/2 cup plain Greek yogurt
  • 1/4 cup melted coconut oil or unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda

Optional

  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Prepare the Pan: Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch baking pan or line it with parchment paper to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, whisk together the Greek yogurt, melted coconut oil (or unsalted butter), granulated sugar, brown sugar, eggs, and vanilla extract until you achieve a smooth mixture.
  3. Add Dry Ingredients: Sift in the unsweetened cocoa powder, all-purpose flour, salt, and baking soda. Gently stir the mixture until all ingredients are just combined, being careful not to overmix.
  4. Fold in Chocolate Chips: If using, fold the semi-sweet chocolate chips into the batter evenly for pockets of melty chocolate throughout the brownies.
  5. Bake the Brownies: Pour the batter into the prepared baking pan, smoothing the top with a spatula. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
  6. Cool and Serve: Allow the brownies to cool completely in the pan before slicing into 9 squares for serving. For a fudgier texture, slightly underbake and chill before serving.

Notes

  • For fudgier brownies, slightly underbake and chill before serving.
  • You can replace coconut oil with butter and reduce sugar if using sweetened yogurt.
  • These brownies also work well with whole wheat flour for a healthier twist.
