Description

Garnachas Mexicanas are a delicious Mexican street food featuring small corn tortillas topped with a savory ground beef mixture, refried beans, shredded lettuce, and crumbled queso fresco. This recipe delivers a perfect balance of flavors and textures with a mildly spiced meat filling and fresh garnishes, making it an ideal appetizer or main course.

Ingredients

Scale

For the Meat Mixture

  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 300g ground beef
  • 2 tomatoes, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste

For the Garnachas

  • 12 small corn tortillas
  • 1 tablespoon vegetable oil
  • 100g refried beans
  • 50g shredded lettuce
  • 50g crumbled queso fresco
  • Chopped fresh cilantro, for garnish
  • Optional hot sauce, for serving

Instructions

  1. Prepare the Meat Mixture: Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the finely chopped onion and minced garlic, cooking until softened and fragrant. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon to ensure even cooking. Stir in the chopped tomatoes, ground cumin, chili powder, smoked paprika, salt, and black pepper. Reduce heat and let the mixture simmer for about 10 minutes until it thickens slightly.
  2. Fry the Tortillas: While the beef mixture simmers, heat the remaining 1 tablespoon of vegetable oil in another skillet over medium heat. Lightly fry each corn tortilla briefly until they become just crisp on the outside but remain pliable enough to fold or hold toppings, then set aside on paper towels to drain any excess oil.
  3. Assemble the Garnachas: Spread a thin layer of refried beans over each fried tortilla. Spoon the prepared ground beef mixture on top, then add shredded lettuce and crumbled queso fresco. Garnish with freshly chopped cilantro for a burst of fresh flavor.
  4. Serve: Serve the garnachas warm, accompanied with optional hot sauce on the side for those who prefer a spicy kick. Enjoy immediately to appreciate the contrast between the warm, slightly crisp tortillas and the flavorful toppings.

Notes

  • For a vegetarian version, substitute the ground beef with sautéed mushrooms or additional beans.
  • Serve immediately while the tortillas are warm and slightly crisp for the best texture.
  • These garnachas can be enjoyed as a snack, appetizer, or a satisfying main dish.
