These fudgy mini brownie bites are the perfect bite-sized treat for any chocolate lover. Made with rich cocoa powder and plenty of chocolate chips, they bake up moist and gooey with a concentrated chocolate flavor. Brownie Batter
- 1/2 cup butter, melted (1 stick)
- 1 cup granulated white sugar
- 2 large eggs
- 2/3 cup cocoa powder, spooned and leveled
- 1/2 cup all-purpose flour, spooned and leveled
- 1 cup mini chocolate chips, divided
Instructions
- Get prepped: Preheat your oven to 350°F (175°C). Spray a mini muffin tin thoroughly with baking spray or line with mini muffin liners to ensure the brownie bites don’t stick.
- Make the brownie batter: In a large mixing bowl, whisk together the melted butter and granulated sugar until well combined. Add the eggs and continue whisking until the mixture is smooth and creamy. Sift in the cocoa powder and flour, gently mixing until just combined to avoid overmixing. Fold in 3/4 cup of the mini chocolate chips delicately.
- Scoop and bake: Using a small cookie scoop, portion the brownie batter evenly into each well of the prepared mini muffin tin. Sprinkle the remaining mini chocolate chips on top of each brownie bite for extra chocolate goodness. Bake in the preheated oven for 14–16 minutes, or until a toothpick inserted into the center comes out with moist, fudgy crumbs but no raw batter.
- Cool and remove: Allow the brownie bites to cool completely in the pan to set. To remove, gently hold the sides of each bite and twist back and forth until they loosen. If needed, carefully run a butter knife along the edges but be mindful this may slightly alter their shape.
Notes
- Using mini muffin liners makes removal easier and cleanup quicker.
- Do not overbake; the brownies should be fudgy, not dry.
- Reserve some chocolate chips for topping to add texture and garnish.
- Allow the brownies to cool fully before removing to prevent breakage.
