- 2 eggs, scrambled
Instructions
- Heat oil: Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering to ensure the vegetables cook evenly.
- Cook vegetables: Add diced carrots and peas to the skillet. Cook for 2–3 minutes, stirring occasionally, until the vegetables are tender but still crisp.
- Scramble eggs: Push the cooked vegetables to one side of the pan. Crack the eggs into the empty side and scramble them gently until fully cooked.
- Add rice: Add the day-old cooked rice to the skillet. Stir well to combine the scrambled eggs and vegetables evenly with the rice.
- Season: Pour in the soy sauce, sesame oil, and sprinkle black pepper over the rice mixture. Stir-fry everything together for 4–5 minutes, allowing the flavors to meld and the rice to heat through thoroughly.
