  • 1 tablespoon furikake seasoning

Crab Topping

  • 1 1/2 cups imitation crab, shredded
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon cream cheese, softened
  • 1 teaspoon soy sauce
  • 1 tablespoon green onions, chopped

For Serving

  • 1 sheet nori, cut into small squares
  • Sliced avocado (optional)
  • Sliced cucumber (optional)


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the sushi casserole.
  2. Season the Rice: In a small bowl, combine the rice vinegar, sugar, and salt. Stir this mixture into the warm cooked sushi rice to evenly season it and enhance the flavor.
  3. Assemble Rice Layer: Spread the seasoned sushi rice evenly into the bottom of a lightly greased 8×8-inch baking dish, pressing down gently to form a compact layer. Sprinkle a generous amount of furikake seasoning over the rice for added flavor and texture.
  4. Prepare Crab Mixture: In a separate bowl, combine the shredded imitation crab, mayonnaise, sriracha, softened cream cheese, soy sauce, and chopped green onions. Mix well until the ingredients are fully incorporated into a creamy, spicy topping.
  5. Layer Topping: Evenly spread the crab mixture over the furikake-coated rice layer in the baking dish, ensuring a uniform layer across the surface.
  6. Bake: Place the assembled dish in the preheated oven and bake for 15 to 20 minutes, or until the top is bubbly and slightly golden, indicating it is heated through and nicely browned.
