Ingredients
Scale
Meat and Vegetables
- 1 lb ground beef
- 1 medium onion, chopped
- 1 can (15 oz) corn kernels, drained
Seasonings and Sauces
- 1 can (8 oz) tomato sauce
- 1 packet taco seasoning (or 1 tablespoon homemade taco seasoning)
- Salt and pepper, to taste
Cornbread Topping
- 1 box (8.5 oz) cornbread mix (such as Jiffy)
- 1/4 cup milk
- 1 large egg
Additional Ingredients
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 1/2 cup sour cream (optional for serving)
Instructions
- Preheat Oven and Prepare Dish: Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish and set it aside for assembly later.
- Sauté Onions: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes until softened and fragrant, stirring occasionally.
- Cook Ground Beef: Add the ground beef to the skillet with the onions. Cook, breaking apart the meat with a spoon, until browned and cooked through—about 6-8 minutes. Drain any excess fat from the skillet.
- Add Corn and Seasonings: Stir in the drained corn kernels, tomato sauce, taco seasoning, salt, and pepper. Reduce heat slightly and let the mixture simmer for 5 minutes, stirring occasionally to blend the flavors.
- Prepare Cornbread Batter: In a separate bowl, combine the cornbread mix, milk, and egg. Stir until just combined, being careful not to overmix.
- Assemble Casserole: Spread the beef mixture evenly in the prepared baking dish. Pour the cornbread batter evenly over the top of the beef layer and spread it with a spatula.
- Add Cheese Topping: Sprinkle the shredded cheddar cheese evenly over the cornbread layer to create a cheesy crust when baked.
- Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, until the cornbread topping is golden brown and cooked through. A toothpick inserted into the center should come out clean.
- Cool and Serve: Remove from the oven and allow the casserole to cool for 5-10 minutes. Serve warm, optionally topped with sour cream for added creaminess.
Notes
- You can substitute taco seasoning with homemade mix using chili powder, cumin, garlic powder, onion powder, paprika, and oregano for a fresher taste.
- For a spicier version, add diced jalapeños or a dash of hot sauce to the beef mixture.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
- This casserole can be made ahead and baked just before serving for convenience.
- If you prefer a dairy-free option, omit the cheddar cheese and use plant-based alternatives or nutritional yeast.
