Description

This Easy Chicken Burrito Casserole is a delicious, comforting dish perfect for a quick weeknight dinner. Layers of shredded chicken, creamy sauce, tortillas, and melted cheese come together in this flavorful Mexican-inspired casserole. It’s customizable with optional black beans and corn, then topped with fresh cilantro and your favorite garnishes.

Ingredients

Scale

Main Ingredients

  • 3 cups cooked, shredded chicken
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 can (10 oz) Rotel diced tomatoes and green chilies, undrained
  • 1 cup sour cream
  • 1 packet taco seasoning
  • 6 large flour tortillas, cut into quarters
  • 2 cups shredded Mexican blend cheese

Optional Ingredients

  • 1/2 cup black beans
  • 1/2 cup corn kernels

Garnish

  • Fresh cilantro, chopped
  • Additional sour cream, guacamole, or salsa (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Mix the Sauce: In a large bowl, combine the cream of chicken soup, undrained Rotel diced tomatoes with green chilies, sour cream, and taco seasoning packet. Stir until the mixture is smooth and well blended.
  3. Layer the Casserole: Spread a thin layer of the sauce mixture evenly on the bottom of the prepared baking dish. Arrange a layer of tortilla quarters over the sauce. Then add one-third of the shredded chicken, black beans, and corn (if using) over the tortillas. Spoon sauce over this layer and sprinkle with cheese. Repeat these layers two more times, finishing with a top layer of sauce and cheese.
  4. Bake Covered: Cover the casserole dish with aluminum foil and bake for 20 minutes. This allows the flavors to meld and heat through evenly.
  5. Bake Uncovered: Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese on top is fully melted, bubbly, and slightly golden.
  6. Serve: Once baked, let the casserole cool slightly before serving. Garnish with fresh chopped cilantro and offer additional toppings like sour cream, guacamole, or salsa on the side for added flavor.

Notes

  • If you prefer a spicier casserole, add extra diced jalapeños or cayenne pepper to the sauce.
  • You can substitute cooked rotisserie chicken to save time.
  • This casserole can be prepared ahead of time and refrigerated before baking; just add a few extra minutes to baking if baking from cold.
  • Use gluten-free tortillas to make this dish gluten-free if needed.
  • Leftovers store well in the refrigerator for 3-4 days and reheat in the oven or microwave.
