Description

These Delicious Cherry Pie Bites are a delightful mini dessert featuring flaky pie crusts filled with a sweet, thickened cherry filling. Perfect for parties or a quick treat, they bake to golden perfection in under 30 minutes.

Ingredients

Scale

Pie Crust

  • 1 package refrigerated pie crusts

Cherry Filling

  • 1 can cherry pie filling (about 21 oz)
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Topping

  • 1 tablespoon sugar (optional, for topping)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with mini muffin liners to prevent sticking.
  2. Cut Pie Crust: Unroll the refrigerated pie crusts and use a cookie cutter or a glass to cut them into approximately 2-inch diameter circles suitable for mini muffin cups.
  3. Thicken Cherry Filling: In a small saucepan over medium heat, combine the cherry pie filling, cornstarch, and water. Stir constantly for about 3-4 minutes until the mixture thickens. Remove from heat and let it cool slightly to make it easier to handle.
  4. Fill Crusts: Place the pie crust circles into the prepared mini muffin tin, gently pressing them into each cup to form a small shell.
  5. Add Filling: Spoon a small amount of the thickened cherry filling evenly into each pie crust shell, being careful not to overfill.
  6. Bake: Bake the pie bites in the preheated oven for 15–18 minutes, or until the crust turns golden brown and the filling is bubbly and set.
  7. Finish and Cool: Remove from the oven and optionally sprinkle the tops with sugar for extra sweetness and a slight crunch. Allow the bites to cool for a few minutes before serving.

Notes

  • Use mini muffin liners if you prefer easy removal and less greasing.
  • Ensure the cherry filling is thickened sufficiently to prevent soggy crusts.
  • These bites are best served slightly warm but can be enjoyed at room temperature.
  • For a decorative touch, sprinkle sugar just before baking instead of after.
  • Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for longer freshness.
