Ingredients
Scale
Chicken:
- 4 boneless, skinless chicken breasts
Butter Sauce:
- 1/2 cup unsalted butter (1 stick)
- 6 cloves garlic, minced
- Juice of 2 lemons
- Zest of 1 lemon
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/4 cup low-sodium chicken broth
Garnish:
- 1 tablespoon chopped fresh parsley
Instructions
- Prepare the chicken: Place the 4 boneless, skinless chicken breasts evenly at the bottom of the Crock-Pot.
- Make the butter sauce: In a small saucepan over medium heat, melt 1/2 cup unsalted butter. Add 6 cloves of minced garlic and sauté for 1–2 minutes until fragrant, being careful not to let it brown.
- Add seasonings: Stir into the melted garlic butter the juice of 2 lemons, zest of 1 lemon, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon dried thyme, 1/2 teaspoon paprika, 1/4 teaspoon crushed red pepper flakes (if using), and 1/4 cup low-sodium chicken broth. Mix well and bring to a gentle simmer.
- Pour sauce over chicken: Carefully pour the lemon garlic butter mixture evenly over the chicken breasts in the Crock-Pot, ensuring they are well coated.
- Cook: Cover the Crock-Pot and cook on low for 4–5 hours or on high for 2–3 hours, until the chicken is fully cooked through and tender.
- Serve: Once done, spoon some of the sauce over each chicken breast and garnish with 1 tablespoon chopped fresh parsley before serving.
Notes
- For extra depth of flavor, sear the chicken breasts in a hot skillet for 2–3 minutes per side before adding them to the Crock-Pot.
- This dish pairs beautifully with rice, mashed potatoes, or roasted vegetables for a complete meal.
- You can shred the cooked chicken to use in wraps, salads, or sandwiches for versatile leftovers.
