Description

These Creamy Oven-Baked Chicken Taquitos are a delicious and easy-to-make Mexican-American dish featuring shredded chicken blended with cream cheese, cheddar, and Monterey Jack cheeses, wrapped in tortillas and baked until golden and crispy. Perfect for a kid-friendly main course or a flavorful dinner option.

Ingredients

Scale

Filling

  • 2 cups cooked and shredded chicken breast
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup salsa
  • 1/4 cup sour cream
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Taquitos

  • 12 small flour or corn tortillas
  • Olive oil spray for brushing

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare the filling: In a large bowl, combine the shredded chicken, softened cream cheese, shredded cheddar cheese, shredded Monterey Jack cheese, salsa, sour cream, garlic powder, onion powder, cumin, chili powder, and a pinch of salt and pepper. Stir everything together until the mixture is creamy and well blended.
  3. Warm the tortillas: Place tortillas in the microwave for 20–30 seconds to make them pliable and easy to roll without cracking.
  4. Assemble the taquitos: Spoon about 2 tablespoons of the creamy chicken filling down the center of each tortilla. Roll the tortilla tightly around the filling and place each roll seam-side down on the prepared baking sheet to seal them during baking.
  5. Prepare for baking: Lightly spray or brush the tops of the rolled taquitos with olive oil to help them crisp up in the oven.
  6. Bake: Place the baking sheet in the preheated oven and bake the taquitos for 15–20 minutes, or until they are golden brown and crispy on the outside.
  7. Serve: Remove from the oven and serve warm with your favorite dipping sauces such as guacamole, salsa, or sour cream.

Notes

  • You can substitute rotisserie chicken to save time and add extra flavor.
  • Using corn tortillas will give you a crispier texture, while flour tortillas roll more easily and stay soft.
  • Add chopped jalapeños for an extra kick of heat.
  • For a spicier option, substitute pepper jack cheese for the Monterey Jack cheese.
