  • 2 cups graham cracker crumbs

  • 1 cup sour cream, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat and prepare pan: Preheat the oven to 325 degrees Fahrenheit. Grease a 9-inch springform pan and wrap its outside with foil to prevent water from seeping in during the water bath.
  2. Make and bake crust: In a bowl, combine graham cracker crumbs, 1/2 cup granulated sugar, and melted butter. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake the crust in the preheated oven for 10 minutes. Remove and let it cool slightly.
  3. Beat cream cheese: In a large bowl, beat the softened cream cheese until smooth and creamy using an electric mixer.
  4. Add sugar and eggs: Add 1 cup granulated sugar to the cream cheese and beat until well incorporated. Then add the eggs one at a time, beating on low speed just until combined to avoid incorporating too much air.
  5. Add remaining ingredients: Mix in the sour cream, vanilla extract, all-purpose flour, and salt. Beat gently until the batter is smooth, taking care not to overbeat.
