Description

This Cottage Cheese Crustless Quiche is a delicious, protein-packed breakfast or brunch option that’s easy to prepare and free from traditional pastry crust. Made with cottage cheese and eggs blended to a smooth texture, it incorporates your choice of vegetables and proteins for a customizable, nutritious dish that’s baked to golden perfection.

Ingredients

Scale

Egg Mixture

  • 6 large eggs
  • 1 cup whole milk cottage cheese
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper

Add-ins

  • 1/2 cup grated cheese (optional)
  • Up to 1 cup choice of vegetables and proteins (bell peppers, spinach, mushrooms, bacon, or ham)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the quiche.
  2. Prepare Baking Dish: Spray a 9-inch baking dish with oil to prevent sticking and ensure easy serving.
  3. Blend Mixture: In a blender or food processor, blend the eggs, whole milk cottage cheese, salt, and black pepper until the mixture is smooth and well combined.
  4. Add Cheese and Fillings: Stir in the grated cheese and your choice of up to 1 cup of vegetables and/or proteins, mixing thoroughly to evenly distribute all ingredients.
  5. Pour Mixture: Pour the blended mixture into the prepared baking dish, spreading it evenly.
  6. Bake: Bake in the preheated oven for about 45 minutes, or until the center is set and the edges are golden brown.
  7. Cool and Serve: Allow the quiche to cool slightly before slicing it into 8 servings and serving warm.

Notes

  • You can customize the quiche by using your favorite vegetables like bell peppers, spinach, or mushrooms, and proteins such as bacon or ham.
  • For a vegetarian version, omit meats and add extra vegetables or plant-based proteins.
  • If you prefer a richer quiche, consider using a mix of cottage cheese and ricotta cheese.
  • Use a blender for a very smooth texture, or a fork/whisk if you want some texture to remain.
  • Leftovers can be refrigerated for up to 3 days and reheated gently in the oven or microwave.
