Wet Ingredients
- 1 cup unsalted butter (softened)
- 115g cream cheese (softened)
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Dry Ingredients
- 2½ cups all-purpose flour
- 1½ teaspoons ground cinnamon
- ½ teaspoon baking powder
- ¼ teaspoon salt
For Rolling
- ¼ cup cinnamon sugar
Instructions
- Cream Ingredients: In a large bowl, cream together the softened butter, cream cheese, and sugar until the mixture is light and fluffy, ensuring a smooth base for the dough.
- Add Egg and Vanilla: Incorporate the egg and vanilla extract into the creamed mixture by mixing thoroughly until fully combined and smooth.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, ground cinnamon, baking powder, and salt to evenly distribute the spices and leavening agent.
- Form Dough: Gradually add the dry ingredients to the wet mixture, mixing gently until a soft and cohesive dough forms without overmixing.
- Chill Dough: Cover the dough with plastic wrap and refrigerate for 30 minutes to firm up and enhance flavors.
- Preheat Oven and Prepare Baking Sheets: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper to prevent sticking.
- Shape Cookies: Scoop tablespoon-sized portions of dough and roll each into a ball. Then roll each ball in the cinnamon sugar to coat thoroughly.
- Arrange and Bake: Place the coated dough balls about 2 inches apart on the prepared baking sheets. Bake for 10–12 minutes until the edges are set and centers remain slightly soft.
- Cool Cookies: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely, preserving their tenderness.
Notes
- For an extra warm spice note, add a pinch of nutmeg or cloves to the dry ingredient mix.
- These cookies freeze well; store them in an airtight container to maintain softness for several days.
