Description

Vegetables

  • 1 small onion, sliced
  • 2 cups shredded cabbage
  • 1 cup sliced carrots
  • 1 cup bean sprouts
  • 1 cup chopped celery
  • 1 red bell pepper, sliced
  • 1/2 cup water chestnuts, sliced

Sauce

  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth

  • 2 tablespoons vegetable oil
  • Salt and pepper to taste


Instructions

  1. Prepare the sauce: In a small bowl, whisk together the soy sauce, oyster sauce, cornstarch, and chicken broth until smooth. Set aside.
  2. Cook the chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken breast and stir-fry until fully cooked and lightly browned, about 5-6 minutes. Remove the chicken from the skillet and set aside.
  3. Sauté aromatics and vegetables: Add the remaining tablespoon of oil to the same skillet. Stir in the minced garlic and sliced onion, cooking for about 1 minute until fragrant. Add the shredded cabbage, sliced carrots, chopped celery, and sliced red bell pepper. Stir-fry the vegetables for 3-4 minutes until just tender.
  4. Combine and finish cooking: Return the cooked chicken to the skillet. Add the bean sprouts and sliced water chestnuts. Pour the prepared sauce over all the ingredients and stir well to coat everything evenly.
  5. Thicken sauce and serve: Cook for an additional 2-3 minutes until the sauce thickens slightly and everything is heated through. Season with salt and pepper to taste. Serve hot over cooked rice or noodles.
