For the Chicken and Garlic Gravy
- 4 boneless, skinless chicken thighs
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 6 garlic cloves, minced
- 2 tablespoons all-purpose flour
- 1 1/2 cups chicken broth
- 1/2 cup heavy cream
- 1 teaspoon fresh thyme leaves or 1/4 teaspoon dried thyme
For the Cheesy Mashed Potatoes
- 2 pounds russet potatoes, peeled and cubed
- 1/2 cup milk
- 1/4 cup sour cream
- 1 cup shredded cheddar cheese
- 2 tablespoons butter
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Season and Sear the Chicken: Season the chicken thighs with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5–6 minutes on each side until golden brown and cooked through. Remove chicken from skillet and set aside.
- Prepare the Garlic Gravy: Reduce heat to medium in the same skillet. Melt the butter, then add the minced garlic and cook for 1–2 minutes until fragrant. Stir in the flour and cook for 1 minute to create a roux. Gradually whisk in the chicken broth, followed by heavy cream and thyme. Simmer the gravy for 5–7 minutes until it thickens.
- Finish the Chicken in Gravy: Return the chicken thighs to the skillet, spoon the garlic gravy over them, and cover the pan to keep warm while preparing the potatoes.
- Cook the Potatoes: Place peeled and cubed potatoes into a large pot, cover with cold water, and bring to a boil. Cook until tender, about 15–20 minutes. Drain thoroughly and return potatoes to the pot.
- Mash the Potatoes: Add milk, sour cream, shredded cheddar, and butter to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
- Serve: Plate a generous scoop of cheesy mashed potatoes and top with the chicken thighs and garlic gravy. Garnish with chopped parsley if desired.

- For extra richness, stir in a few tablespoons of grated Parmesan cheese into the mashed potatoes.
- Chicken breasts can be used instead of thighs; adjust cooking time accordingly to ensure chicken is cooked through.
